Red Lentils
Red lentils are a fantastic ingredient in soups. They cook in about ten minutes and are packed with protein, fiber, and many other nutrients. I use half a cup of lentils and 4 cups of water when cooking a simple vegetable soup! |
Chard
If there is one vegetable that has enriched my cooking lately, it's the large green leaves of chard. They are high in nutritional value like kale and spinach. In soups they become soft and silky and blend nicely with the other veggies in the meal! |

If you are preparing for a transition, especially with the types of food that you eat, remember that the transition is part of the experience and the person you are after the change should be better for it. It takes time and effort to transform, but it should make you a stronger, more resilient person. |
