This vegan spinach pie with phyllo dough is very easy to make and fun to eat. Based on the Mediterranean style of cooking, it's light and delicious. Here's how to make it:
Vegan Spinach Pie Recipe
What you need
1 Frozen Phyllo Dough Package - Thawed
2 Frozen Bags of Spinach 16oz each - Thawed
Olive Oil For Brushing On Phyllo
1/2 Lemon For Juice
Salt and Black Pepper To Taste
1/4 Cup Quartered Marinated Artichoke Hearts - Chopped
1/4 Cup Kalamata Olives - Pitted and Chopped
9x13inch Baking Dish
What you do
- After the spinached is thawed and drained (squeeze out remaining water), mix in a bowl with lemon, salt, and pepper, artichoke hearts, and Kalamata olives
- With a brush, lightly spread olive on sheets of phyllo dough and place six sheets on the bottom of the baking dish with the olive oil side face down
- Spread spinach mixture onto phyllo dough
- Cover mixture with another 4 to 5 sheets of phyllo dough brushed with olive oil
- Place in oven at 300deg for 45 minutes or until phyllo dough is lightly browned
- Let cool and serve with rice or Red Bulgar or quinoa and salad or make a nice tabouleh as well.
