Silvia said when she first started out she bought a lot of pre-prepared vegetarian frozen foods, but then she started thinking, “the less processed the better.” For instance, she makes her own veggie burgers using bulgur as a base, along with shredded mushrooms, onions, carrots, egg and Worcestershire sauce.

“I think people should be aware that adapting to a vegetarian lifestyle is not that difficult,” said Silvia, who retains the accent of her native Alabama. “If you look around, you can find vegetarian options. And if you can’t find them, you can always make them yourself. It’s not that hard."
