Recipe: Southwestern Dal

     Both the American Southwest and India have a rich culture of food so why not combine them in this flavorful meal!  Although lentils are used extensively in South Asian cooking, they blend nicely with southwestern ingredients to make a delicious dal or stew!.  Enjoy this colorful meal with a corn tortilla, over rice or quinoa, or by itself.  Protein rich red lentils cook quickly making this meal quick, simple and easy!

Southwestern Dal (22 min)
All you need
2 Cups Water

½ Cup canned tomato sauce, no salt added
½ Cup red bell, thinly sliced and chopped
¼ Cup green bell pepper, thinly sliced and chopped
¼ Cup canned corn, no salt added
1 Tsp fresh lime juice
½ Tsp agave nectar
2 Tbsp fresh cilantro, diced
½ Tsp ground black pepper, ½ tsp garlic powder, ¼ tsp salt

½ Tsp ground cumin
½ Cup red lentils, uncooked

What you do
Add all ingredients, except lentils, to 2 qt pot and bring to boil
Add lentils and stir frequently in first 30 seconds to prevent sticking to bottom of pot
Reduce heat, cover, and simmer for 10 minutes

Remove from heat, let cool, and serve

Things to consider
Garnish with fresh cilantro or chopped avocado for additional flavor.
Add additional seasoning to taste – diced jalapenos, chili powder, chipotle powder, or paprika.

Substitute chopped poblano peppers for green bell peppers for more heat.
