One segment of this market is taking the concept of urban farming a step further. Growers of microgreens, vegetable seedlings such as spinach, broccoli, and kale less than 14 days old, are turning entire office suites into high tech farms. City Center Farms in central Phoenix, Arizona, is an example. It grows microgreens in a cleanroom environment in a building suite using high tech equipment. Farmers wear white bunny suits to keep the room sterile and produce greens which don’t even need to be washed before sale.
Eventually we may see several floors in high rise buildings or condos dedicated to larger scale production of full grown produce supporting the community. This is a concept worth watching as it may change where we buy fruits and vegetables in the future!
