I can understand why athletes feel this way about plant-based diets. I ran my first half marathon this past weekend which is 13.1 miles long. My pace was an 8 1/2 minute mile and I finished in 1 hour and 55 minutes. I was happy to be racing again after a long time and to reach this distance. When I ate meat over 10 years ago, I could only run for about 4 miles before quitting. But with my vegan diet and a lot of training, I was able to glide through the race.
It was great to see my body performing so well and efficiently. This experience reaffirmed my conviction that diet does have a huge impact on the body's ability to endure and operate with great strength. My meal the night before was a mixture of quinoa, lentil soup, red yams, and silken tofu. I also ate a handful of pistachios and half a banana. This mixture gave me a lot of energy and helped me pass several runners at the end of the race. It was a fun day for this vegan half-marathoner!
