All you need
1 lbs (roughly) raw pumpkin, chopped into bite size pieces (from a 2 ¼ lbs or 1 kg small whole pumpkin)
¼ Cup green bell pepper, chopped
2 Cups water
½ Cup coconut milk (from can)
1 Tsp fresh lime juice
1½ Tsp curry powder
½ Tsp ground cumin, ground ginger, garlic powder
½ Tsp ground black pepper, garam masala, ground turmeric
¼ to ½ Tsp salt
What you do
Add pumpkin, bell pepper, and water to large sauté pan, bring to boil, and cook on medium to medium low for 10 minutes, or until pumpkin is soft
Add remaining ingredients and cook for 5 minutes more
Remove from heat, let cool, and serve
Things to consider
Although this is a mild curry dish, if you prefer a milder curry taste, reduce the curry powder amount by ½ tsp. The curry flavor should not overwhelm the flavor or sweetness of the pumpkin.
Garam masala is a spice blend which is available in most grocery stores. If you can buy it in bulk, the flavor will be stronger and more authentic. The same goes with all of the other seasonings, especially the curry powder.
Garnish with chopped cilantro and serve over rice!
